Vegan Chocolate Walnut Brownies

Sinfully delicious! These brownies are so good, even the most experienced chocolate dessert eaters wouldn't guess they are vegan.


Ingredients:


1 ½ cups unbleached flour
½ cup cocoa
1 ½ cups brown sugar
¾ teaspoon baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
¾ cup coffee
¾ cup soy milk
⅓ cup vegetable oil
½ cup walnuts, roasted and chopped
½ cup vegan chocolate chips

Glaze (optional):
7oz (200g) vegan dark chocolate
5oz (140g) vegan margarine


12 servings.


Sift together the flour, sugar, baking powder and soda, and salt.

In a separate bowl, combine the coffee, soy milk, and oil.

Add the liquid to the dry ingredients and mix. Then stir in the walnuts and vegan chocolate chips.

Pour the batter (it will be quite liquid) into a greased 9 inch (23cm) square pan.

Bake at 325˚F (160˚C) for 25 minutes or until skewer comes out clean.

For glaze: Melt together the vegan dark chocolate and margarine and whisk, then drizzle over brownies.
